Keluwek (Pangi)i bestows an enigmatic flavor and dark rich color to dishes, most notably rawon. The football shapped black nuts are native to Indonesia where they are sometimes mixed with grated coconut and used for killing rats!. Somewhere along the line a clever chef discovered how the keluwak could be made deliviously edible by first boiling away its toxic properties.
If you find keluwek it will hopelly be detoxified and most likely dried. Rehydrate it in hot water before use.
