Indigeneous to Indonesian, this rhizome is not to find in the West. You might locate Kunci (Fingerroot) frozen or powdered by its Thai name of krachai, or its Vietnamese name of ngai num kho. If you do find the fresh root you might want to freeze some to keep it on hand. See the entry of jahe for more information on working with rhizomes. Kunci has a lot of healthy properties and is an ingredient in many jamus. It is used moderately in cooking, with a good example being perkedel jagung. Where unavailable, substitute half ginger and half laos for kunci.
