Lengkuas (Galingale)
Alpinea Galanga
Lengkuas (Galingale) also known as lengkuas in Java, laos is used in medicinal tonics and some even claim it has hallucinogenic properties. Because of its popularity in Thai cuisine it is becoming easier to find in Western supermarkets. The dry powder is called galanga in Asian markets, but it's best to use fresh laos when possible as the flavor shifts a bit as it dries. See the entry on ginger for information on measuring and freezing laos root.
